2009

The First Flame

Costa Vida opens its first location in Apple Valley, MN. Founders Maria and Carlos Mendoza serve handmade tacos and house-made salsas from a cozy 40-seat dining room.

2012

Growing the Menu

Following overwhelming community support, we introduce our signature slow-roasted pork burrito bowl and hand-pressed corn tortillas — both instant fan favorites.

2015

Community Recognition

Costa Vida is named "Best Mexican Restaurant in the Twin Cities" by readers of a local food publication — a milestone that humbled and inspired the entire team.

2018

Expanding Our Reach
